Nikolas Paraskevas Becomes an International Bread Sommelier

We are delighted and proud to announce that Nikolas Paraskevas, Head of the Food Technicians team at Thrakis Mills, has earned the prestigious International Bread Sommelier certification, following a year-long training program at the renowned Weinheim Institute in Germany.

Training & Specialization

The demanding twelve-month program included in-depth study in areas such as:

• The history and culture of bread
• Ingredients and production methods
• Sensory evaluation
• Descriptive language and analysis of bread characteristics
• Bread and food pairing
• The international bakery market

Innovation in the Final Thesis

In his final project, Mr. Paraskevas focused on translating the bread tasting terminology into the Greek language and developing pairings between traditional Greek dishes and the ideal types of bread.
The result demonstrates that when knowledge and care meet, even the simplest Greek dishes can be elevated into refined gastronomic experiences.
