He joined Thrakis Mills as a Technical Advisor in 2008 and, since 2024, has been serving as Sales Technical Support Department.
He has attended dozens of seminars in Greece and abroad. In 2022, he published his first book titled Master Baker, writes articles for bakery and pastry magazines, and is a seminar instructor.

Christos Tsoumanis

of the Sales Technical Support Department and Exports at Kenfood. From 2015 to 2023, he worked with the Loulis Group, initially as Head of the Sales Technical Support Department and later as a Key Account Development Technician.
He has extensive experience in traditional, artisanal, and industrial baking and pastry-making, with deep knowledge of both the Greek and international markets. He joined our team in January 2024.

Yiannis Apostolakis
Yiannis Apostolakis studied bakery and pastry arts at the OAED School in Galatsi and began his career in well-known bakeries and pastry shops in Athens.

He later worked as a pastry chef and production manager in major hotels such as the Royal Myconian Resort & Villa and Pentelikon Hotel. He has attended bakery and pastry seminars both in Greece and abroad.
Since 2018, he has been part of the Thrakis Mills technical team, serving as a bakery and pastry technical advisor.

With over 11 years of experience across all production departments in well-known bakeries in Athens, he worked at Puratos from 2016 to 2024 as a bakery and pastry technical advisor. He has attended seminars in both Greece and abroad.

of the Bakery Cooperative of Feres. After working as a production manager in bakeries in Alexandroupolis, he opened his own bakery in Amaliada, followed by a pastry production business specializing in phyllo dough products in Alexandroupolis.
Since 2014, he has been working at the Thrakis Mills bakery facility, where his main responsibility is the bakery testing of all produced flours and mixes, ensuring quality and compliance. He also conducts product presentations for bakery and pastry businesses.

Baking Academy
On the ground floor, you’ll find a fully equipped baking center where all the bakery testing for the Research & Development Department of Thrakis Mills and Olyra takes place. The space also hosts on-demand product presentations for small groups of professionals or students, as well as technical seminars in baking and pastry.
On the first floor, there is a seminar room equipped with audiovisual systems for theoretical workshops and presentations, along with a dedicated area for professional meetings.
